Question about Timing

I've replaced a timing belt on a V6 before. However, I'v never replaced a head gasket. I need to remove the cams and of course, the cylinder head. The question I have is how do I reset the timing after all that? Do I just put it back together (getting the heads machined) line up the timing marks and slap on the timing belt? Thanks.
This is on a '99 626 V6.
Do I need to set the No. cylinder at TDC before removing the heads?
Also, I see the dead bolts look a bit funky...not the regular bolt head. What's up with that?
