I have no idea how much weight I've trimmed out so far. It depends how much goes back in when I am done. I'm shooting for 2300 pounds with me in it if it's possible.
I know what you mean about the dash Matt. It is a huge bitch to take out. I already pulled the harness from mine and re-connected everything so all I have to do is olt the new one in. After I trim it up some and paint the rusted parts.

I picked up a black dash from Whitenoyz today. I already have it stripped down to its basic parts.
The metal bracket that holds everything up. The plan is to get some rustoleum on it so it looks a little nicer. It won't be fully covered when it goes into the car. I'm thinking about using a black hammered finish because you can apply it right over rust and the hammered look will cover the blemishes in the paint.
And the plastic dash mat.
I removed the vent tubes and the remainder of the wiring harness too.

And I am done for today. I got the dash support painted, got the dash back together, tidied up the wiring even more, installed the dash, cleaned out a bunch of wiring and crap from the trunk, and spent a few hours with dry ice hammering off my sound deadening material.
Tomorrow I will see about getting some more dry ice, filling the holes through the firewall, making a bracket to hold my wideband gauge, finishing hiding/cleaning up the wiring, mounting my MS unit in the passenger's foot well, and heading to the you-pull-it yard to see about getting a seat and a few other black pieces I need.

Dry ice works great. I just let it sit on each section for 10-15 minutes until the tar stuff was frozen looking and whacked it with a hammer. It chips off in pieces and flies all over the car. It's very satisfying.
The hammer and chisel method blows donkey cock. I gave up on that after the first 30 minutes.
