I currently have a 93 MX6 KLZE with a Flowmaster Exaust and a CIA.. What kinds of cars could I "race" and win against? And what kind of other mods should I do? And/or what would be another good project car to start aside from a MX6?

You could race and win against a whole bunch of things, you can race and lose against a whole bunch of things

Do whatever mods you want, don't let other people tell you what to do, it's your car.

get a 5.0 mustang , unless you care about gas milage. Maybe an rx7?

If you want your 6 to be fast than why would you want to start a new project? It'll take you a long time to make one car fast if you try to modify 2 at the same time. Throw the extra money into one and you'll beat most cars on the streets.
