Removal of heat to reduce undrbonnet temps is always a good thing. It doesn't really give you more power, it does however give you more consistent power. As the temp rises, the performance will decrease. Generally the best way to reduce underbonnet temps is to get exhaust components coated with ceramic or simular coatings (can be quite pricey). Also venting helps a lot.

Most electronics stores will sell quite cheap electronic thermometers with at least two pickups. One is usually mounted in the display and one on the end of a long wire.

The best type is a K type thermocouple. Very accurate and fast reaction to temp variations and aren't afected by airflow. Also quite expensive.

Or you could plate the whole underside of the hood with GOLD. They put that in the expensive exotic sports/race cars cuz thats the best thing that helps against too much heat. :) Good luck. :) You'd have to go gold digging for the rest of your life. :)
