Transmission fluid change question

I changed the fluid and filter in my 1993 MX-6 ls automatic. My Haynes manual said the fluid capacity is 7.2 quarts so I added 4 quarts of Valvoline maxlife ATF and figured I'd start measuring the level, but when I did the fluid level was way above the max.
So now I'm wondering if draining the ATF and dropping the pan to change the filter removes less than 4 quarts of fluid or if the stick is just getting coated in fluid since the fluid is added through the same hole and the hole has fluid all over it.

How much fluid came out? Did you check it with the engine off or running?
I drained it into a container that doesn't let you see the fluid and I also made a mess when the pan came out so I'm not sure. The engine was off.
Per the FSM, you should check the fluid level with the engine running:

Is there a way to check the fluid temperature with an OBD1? The ambient temperature where I'm at is 10C so I'm not sure how long I'd have to leave the car on before measuring.

No there isn't, and fluid expansion is less than 10% for something like this
Total capacity is different than pan capacity, 7.2 quarts likely includes torque converter, lines, cooler, etc. Although I've never changed the filter on one of these, I'd expect 2.5-3 quarts in the pan is all.
